Boston Brown Bread

Ingredients:

  • 1 ½ C raisins
  • 2 C water
  • 1 C sugar
  • 1 T shortening
  • 1 egg
  • 2 ½ C flour
  • 2 tsp baking soda
  • 1 tsp salt
  • cream cheese

Combine the raisins and water in a pan and heat to a boiling point.

In a large bowl, cream together the sugar and shortening. Add the egg and mix well.

In a separate bowl, combine the flour, baking soda, and salt.

Alternating between the raisin mixture and the flour mixture, gradually add those ingredients to the creamed sugar mixture in the large bowl until well combined.

Pour into tin cans (or bread tins) until approximately half full.

Let the tins stand for 15 minutes.

Bake at 350 degrees F for 1 hour. After cooling and slicing, spread with cream cheese – delicious!

Note: This recipe makes about 3 tin cans. Cans that work well are similar to the size of beef stew cans that are bigger around than a soup can, approximately 20 oz. capacity.

CAKE

  • 2 – 3 oz. packages cream cheese, softened
  • 2 T powdered sugar
  • 2 T lemon juice
  • 2 C flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 C sugar
  • 1/2 C butter or margarine, softened
  • 3 eggs
  • 1 tsp vanilla
  • 1 – 8 oz. container sour cream

TOPPING

  • 1/2 C finely chopped walnuts
  • 1/4 C sugar
  • 1 tsp cinnamon

Preheat oven to 350 degrees F. Grease and flour 10” tube pan.

In a bowl, beat cream cheese, powdered sugar and lemon juice until light and fluffy. Set aside.

In medium bowl, stir together flour, baking powder, baking soda, and salt.

In large mixer bowl with electric mixer on medium, beat sugar and butter until light and fluffy. Add eggs and vanilla.

Note: This is a delicious coffeecake and is worth the time and effort for a special New Years breakfast or brunch. The recipe comes from a Woman’s World magazine some years ago. Provides 12 servings.

Jalapeno Jelly

Ingredients:

  • 1 C jalapeno peppers (8-9 peppers)
  • 1 medium green pepper
  • 2 C vinegar
  • 6 C sugar
  • green food coloring
  • 1 bottle Certo

Remove stems and seeds from peppers. (Use rubber gloves when handling jalapenos.) Put jalapenos and green pepper with 1 cup of vinegar in a blender. Blend until puree consistency.

Pour the pureed peppers into a heavy saucepan. Add the sugar and remaining vinegar. Heat to a rolling boil that cannot be stirred down.

Remove from heat and add food coloring to desired shade. Stir in certo.

Strain, then pour into jelly jars. Makes about 7 cups of jelly. Serve with cream cheese on crackers.

Note: You have three options for sealing the jars. Option 1: Melt paraffin wax and pour on top of the jelly in the jars to seal. Option 2: Pour jelly into hot, sterilized canning jars and top with sterilized lids. Secure the lids with the rings and allow the jars to cool. Option 3: Pour jelly into canning jars, top with the lids and secure with rings. Submerse the jars in boiling water for at least 10 minutes.

Stinky Pretzels

Ingredients:

  • 2 (16 oz) bags small twist pretzels
  • 1 (12 oz) bottle Orville Redenbacher Popping Oil
  • 1 packet Hidden Valley Ranch Salad Dressing and Seasoning Mix – 1 oz powder
  • 1 tsp garlic powder
  • 1/2 tsp lemon pepper (or dill weed or both)

In a small bowl, mix together the ranch dressing packet, garlic powder, and lemon pepper.

In a large bowl, add two bags of pretzels, the bottle of popcorn oil, and the ranch dressing mix.

Blend well and stir every 15 minutes for about one hour. The pretzels will absorb much of the oil and the spices will coat the outside.

Place the pretzels on paper towel to absorb the excess oil. Place in a zip-lock bag or plastic container and let sit for 6-8 hours (if you can wait that long).
