National Cookie Day Recipes

December 4th is National Cookie Day!

How appropriate for this day to be in the same month as Christmas. Many of us have been baking (or will be baking) cookies and other goodies for the holiday celebrations.

But as we all know, we don’t need a holiday to make cookies! Nonetheless, I wanted to share a few of my favorite Christmas cookie recipes.

Peanut Butter Cookies with Chocolate Stars

Ingredients:

  • 1/2 C shortening or butter
  • 1 C white sugar
  • 1 C brown sugar
  • 2 eggs (slightly beaten)
  • 1 C peanut butter
  • 1/4 tsp salt
  • 3 C flour
  • 2 tsp baking soda
  • 1 tsp vanilla
  • extra white sugar
  • chocolate stars

Steps:

  1. Preheat oven to 350 F.
  2. Combine the butter and sugars until creamy.
  3. Add the eggs and peanut butter and mix well.
  4. Slowly add the salt, flour, baking soda, and vanilla until well combined.
  5. Shape the dough into 1” balls and roll in white sugar. Place on ungreased cookie sheet about 2” apart. Parchment paper or silicone mats work well.
  6. Bake 8 minutes. Remove from oven and press a chocolate star on each cookie.
  7. Return to oven and bake an additional 2-5 minutes.

(Makes approximately 60 cookies.)


Mexican Wedding Rings

Ingredients:

  • 1 C butter
  • 6 T powdered sugar
  • 2 C flour
  • 2 tsp vanilla
  • 1/2 C chopped nuts (walnuts)
  • extra powdered sugar for coating baked cookies

Steps:

  1. Preheat oven to 350 F.
  2. Cream butter and sugar.
  3. Add flour, vanilla, and nuts.
  4. Mix well and shape into 1” balls. Flatten with fork and bake 10-12 minutes.
  5. While still warm, roll in powdered sugar.

No Bake Cookies

Ingredients:

  • 3 C sugar
  • 1/2 C milk
  • 1/4 C butter or margarine
  • 1/3 C cocoa
  • 3 C quick cooking oats (oatmeal)
  • 1/2 C coconut<br>1/2 C peanut butter
  • 1 tsp vanilla

Steps:

  1. Combine the sugar, milk, butter, and cocoa in a pan. Slowly bring to a boil while stirring. Boil for one (1) minute.
  2. Add the oatmeal, coconut, peanut butter, and vanilla. Turn off heat and mix quickly to combine ingredients.
  3. Drop by teaspoonfuls onto waxed paper. Let cool.
